June meal ideas

Looking forward to the month of June very much!

More relaxed schedules. More grilling.

More picnics. More family fun!

What are you looking forward to?

And speaking of picnics, what do you do for picnics? Us, we take the easy route. I used to think I had to make up a slaw and foiled wrapped veggie goodness, but we've since discovered the easy route...hotdogs or burgers, fresh rolls, a bag of chips, carrot sticks and ranch, and cookies. Easy-peasy. We head for the nearest park and relax.

Sometimes I'll make up a quick slaw or carrot salad to bring along, but often our picnic decision is spur of the moment. Sometimes we get subs or a pizza. I keep a picnic basket packed so I don't have to think of what all to bring every time. It's ready to GO.

The best thing for us is just getting out of the house and relaxing in our camp chairs at a beautiful park. If we stayed home, we'd find something to do while getting supper on, or we would hop up from the supper table and get back to work! This way we unwind a bit and relax!



Here's a few meal ideas I have in mind,

Cheeseburger Pie

Lime Chicken Soft Tacos

Stuffed Shells

Mexican Casserole

Creamy Cajun Pasta with Blackened Chicken

Shepherd’s Pie

Party Beans (recipe below)

Chicken Bruschetta Casserole

Cowboy Quesadillas

Potato & Bacon Breakfast casserole

Granola (1.5 lbs)


Party Beans recipe from a DF

Brown ½ lb hamburger and onion
6-7 strips bacon, fry ahead, drain and break up

1 can red kidney beans, do not drain

1 can butter beans, drained

½ cup molasses

¼ cup brown sugar

½ cup ketchup

1 tsp dry ground mustard


Mix all together and bake at 350* for 1 hour.

I totally enjoy impromptu picnics - I keep an old quilt in my car for those occassions where we just want to pick something up and stop at a park somewhere!

Pizza in the park is our preferred picnic! :) Easy. Fast. Kid-friendly. Mom-friendly too...
